If you’ve been following DoSayGive on Instagram from the very beginning, you’ve probably seen our annual post with our school bus cake. I’ve been doing this since my oldest went to kindergarten – every year, the night before the first day of school, I bake a school bus cake for us to share. This is something all my kids are looking forward to, and it marks the start of a new season.
My college roommate Megan once told me her mom did it every year while she was growing up, and I put the idea away for when I had kids. I thought this was the sweetest idea! Traditions don’t have to be complicated or perfect (for many years my cake was uneven!); Traditions are meant to bring families together and solidify memories.
After years of making this cake, we’ve finally put together a little how-to question so you can start this tradition. You can also use boxed cake mix or your favorite homemade recipe! Have fun with it and get your kids involved in the cooking too.
Back To School Bus Cake
Contents
1 Recipe vanilla cake (homemade or box mix)
1 Recipe vanilla buttercream frosting (homemade or store-bought)
yellow food coloring
black food coloring
Black Liquorice
Oreos (or Mini Chocolate Donuts but these get a little messy)
Mini Nilla Wafer
Red and yellow Skittles or M&Ms (You can use red hots if you can find them!)
Prepare the Vanilla Cake
1. Preheat oven to 350 degrees F. Spray two loaf pans with nonstick cooking spray and line the bottom and sides with parchment paper.
2. Prepare the vanilla cake according to the instructions (either according to your recipe or per box) and divide evenly between the two loaf pans. Bake until the cakes touch again or until the cake tester comes out clean.
3. Remove the cakes from the oven and let them cool before removing them from the moulds.
4. Cut 4 inches from the bottom of one of the nuts; set it aside.
Prepare the Vanilla Buttercream Frosting
1. Prepare the vanilla custard cream according to your recipe instructions. If you purchased store-bought frosting, take it from the container into a bowl.
2. Using the yellow food coloring, dye the cream yellow; set it aside.
Assemble the School Bus Cake
1. Using a plate or cake board, place a full-size vanilla cake loaf on the board.
2. Spread yellow icing to cover the loaf, then place the short loaf cake on top.
3. Coat the layered loaf cakes with yellow icing until they are completely covered and the icing is smooth.
4. Put a small amount of yellow cream in a separate bowl. Add a few drops of black food coloring to create a black frosting for decoration.
5. Cover the windows of the bus and the front grille of the bus with black ice using a small round-tipped piping bag.
6. Place the black licorice on the floor of the bus, the red Skittles for the siren lights and the yellow Skittles for the headlights.
7. Place Oreos for the wheels of the bus and Mini Nilla Waffles to represent the kids. (You can also print photos of the kids, which I often do!)
8. Decorate children’s faces with additional icing; Be creative to make them look like your family!
9. Serve and enjoy!
As I said before… Traditions: You don’t need much. You don’t even need fancy ones. You just need to hide them. I hope you love this sweet and simple tradition as much as my family!
